Quinoa Upma

Introduction
Take ½ cup quinoa and rinse very well in running water.Strain and keep aside. . Heat 2 tbsp oil in a pan. Add ½ tsp mustard seeds. Once the mustard seeds begin crackling, and then add ½ tsp urad dal and or chana dal. Stir and saute on a low flame. . Saute till the urad dal turn golden. Then add 1 inch of finely chopped ginger, 1 tsp chopped green chilies. Saute for a minute. Next finely chopped onions and curry leaves. Saute till the onions become translucent. Then add ½ cup finely chopped carrots, ¼ cup finely chopped french beans and ¼ cup peas.

How to make
Cooking Quinoa
The best way to cook Quinoa is by washing it several times with water to remove its outer coating of saponins which is bitter in taste. After washing, it should be soaked in water for about 30 minutes so that the nutrients present in it are easily absorbed by the body.
The thoroughly washed and properly dried quinoa seeds can be grinded to flour. The flour can be used for several preparations just like wheat atta.
The quinoa can be prepared just as rice by boiling it.
